There are many simple recipes for Clementine cake that it can be hard to choose from, but some of the best ones are the most simple ones. Not only is the recipe simple, but making it is also an easy task and can be done even when you are stressed to the max.

This is a sponge cake recipe and it is one of the cakes that will taste like you have given extra sugar syrup to the top, but in fact there isn’t any. You need around 3 medium sized clementines, 6 eggs, large ones, 225 g white sugar, 250 g ground almonds and 1 teaspoon of baking powder. First, put the clementines into a pan of cold water, boil and cook for another 2 hours. Drain and cool them and cut them into halves and take out the pips. Put the whole fruit into the food processor and mix it well.

Preheat the oven to 375º/190º while you are buttering a 8 inch springform pan. Add the remaining ingredients into the processor and mix well. Pour the full mixture into the greased pan and put it in the oven for an hour. Take the pan from the oven and let it cool before taking it out of the pan.
